I've been feeling very inspired at the moment to bake due to the Great British Bake Off. (genuinely the single greatest cooking show ever) I decided to bake these delicious Peanut Butter Chocolate Chunk Cookies today and thought I'd share the recipe with you all! So keep reading to find out how to make these mouthwatering treats.
I N G R E D I E NT S
110g softened butter // 130g peanut butter // 220g dark brown soft sugar // 100g caster sugar // 2 eggs // 2 tbps golden syrup // 2 tbsp water // 2 tsps vanilla extract // 310g plain flour // 1 tsp bicarb soda // 1/2 tsp salt // 340g chopped chocolate of your choice (I used a combination of milk and white chocolate for extra yummy-ness!)
*preheat oven to 190 c / Gas 5*
M E T H O D
1. In a large bowl (or food processor like I used) cream together the butter, peanut butter, dark brown soft sugar, and caster sugar until smooth.
2. Beat in the eggs, one at a time. Then stir in the golden syrup, water and vanilla.
3. Combine flour, bicarb soda and salt in a separate bowl, then combine with the peanut butter mixture and mix!
4. Fold in the chocolate chunks (mm yummiest part!)
5. Drop by heaping spoonfuls 7cm apart (my baking trays weren't big enough, so I spread them as far a apart as I could and they turned out great!) onto lined baking trays.
6. Bake for 12-14 minutes, or until the edges are golden. Let them cool for a minute on the baking trays before removing to wire racks to cool completely
And voila! The cookies are ready to be demolished. They're lovely and chewy if you don't over bake them, perfect treat after a hard days work at uni/school/work with a glass of cold milk.
